Apple Pistachio Crisp

Autumn apple oat crumble cake with cinnamon.(Serves 4)

Chock full of crunch as well as taste, this summery crisp brightens any table all year long. It’s also a delicious way to increase the amount of fruits on your plate, and savor something a little sweet without a lot of sugar (just 25 g). This 330 calorie dessert contains 60 mg of sodium, and 60 g carbs. It’s another good source of calcium (47 mg), potassium (416 mg), and some protein, too (5 g).

Ingredients:

3 apples (such as Honeycrisp, cored and cut into 1” chunks and unpeeled)

1/2 cup raisins

1/2 lemon (juiced)

1/2 cup old fashioned oats

1/4 cup whole wheat flour

1 tsp. cinnamon

3 tbsps. brown sugar

1/4 cup pistachios (unsalted, chopped)

2 tbsps. margarine or butter (melted)

Place rack in center of oven and preheat to 350 ºF. Place sliced apples, raisins, and lemon juice in 8” x 8” pan or baking dish; toss. In a bowl, mix remaining ingredients, except melted margarine. Add melted margarine and mix, until texture is consistent. Sprinkle over apple-raisin mixture. Bake uncovered 45-50 minutes or until apples are tender. Spoon out and serve.
