Fruit cocktail with coconut cubes and shaved coconut, mixed with cream cheese

Remember this cool and classic fruit-filled dessert? This luscious blast from the past breaks the mold with an updated mix of low-fat yogurt (a good source of calcium). It finishes off a meal nicely (or serves as a sweet snack!) at just 139 calories, 2 mg cholesterol, 2 g fat, 3 g protein, and 27 mg sodium, along with 26 g sugar.

(Serves 8)

Ingredients:

1 banana (peeled and sliced)

1 1/2 cups grapes (seedless)

1 1/3 cups mandarin orange slices (drained)

1 can pineapple chunks (in juice, 20 oz., drained)*

3/4 cup mini-marshmallows

1/3 cup coconut (flaked)

1 cup vanilla yogurt, low-fat (8 ounces)

Drain the pineapple and oranges (save for use in beverages). Combine fruit with mini-marshmallows and coconut. Then fold into the yogurt. Chill for at least 30 minutes, spoon out, and enjoy.

*You can also opt for fresh pineapple chunks for better texture, and to cut back on sugar content from the juice. Substitutions will alter nutritional information.
